I cannot describe how in love with this cake I am. I made my first carrot cake this weekend. It was delicious! I’m definitely going to be making this type of cake a lot more now! The recipe I have was given to me by my family and I see why they all said it made a delicious cake.

For the cake : 2 cups of sugar, 2 cups of flour, 2 teaspoons cinnamon, 2 teaspoons soda, 1 teaspoon salt, 1 1/2 cups liquid crisco oil, 4 eggs, 3 cups grated carrots.

Cream sugar and oil, beat in eggs 1 at a time. Then add in flour, cinnamon, soda & salt. Then add in the carrots. Spray a bundt pan with Bakers Joy and fill with the cake batter. Bake at 350 degrees for 42 – 45 minutes.

For the icing : 1lb powdered sugar, 1 stick of butter, 1 brick of cream cheese, and 2 teaspoons vanilla. Mix together and spread over the cake.

It is really easy to make, I didn’t buy grated carrots but used a grater I had to make the carrots really small and I kind of like it that way. I would also consider adding pecans next time, but I love pecans and think they should go in almost all deserts. It is so good I think I will go have myself a piece right now!
