Hello friends! I cannot believe May is already here. The first four months of the year have flown by. In honor of warm summer nights on the patio I tried out this Kiwi Lime Mojito recipe. Totally sweet and refreshing!
You will need : Mint, 1 Lime, 1/2 Kiwi, 1 ounce white rum, simple syrup, and club soda.
To Mix : Remove the skin from the kiwi and cut into cubes. To a tall glass add a couple pieces of the kiwi and 2 -3 mint leaves. Muddle together and add the simple syrup (I just eye ball it and the adjust later.
Fill the glass with ice, add 1 1/2 ounce rum, the remaining kiwi pieces, squeeze in half of the lime. Give the contents a good stir and garnish with a lime wedge and mint leaf.
A lot of recipes will call for granulated sugar in the mojito. I have found that the simple syrup makes mixing it easier as well as a more consistent sweetness throughout the drink. It is very easy to make the syrup just heat 1 cup water with 1 cup granulated sugar in a sauce pan over medium heat, continually stirring until dissolved. Let it cool and place it in an airtight container till you are ready to use it. It will stay fresh for about two weeks.
