We are heading into week 6 of football season. I cannot believe how quickly time is flying. I don’t know about you but I really love watching all the games and having something to snack on throughout the day. Bonus points if it is made out of fresh veggies like guacamole. I’ve landed on a really great recipe for guac which I want to share with you.

Ingredients: 2 Avocados, 1/4 cup diced red onion, 1/4 cup diced roma tomatos, a pinch of salt, juice from a lime wedge, 1/2 tsp diced jalepeno (membrane and seeds removed).

Directions: Add smashed avocado to a bowl and squeeze the lime wedge over it mixing well. Add onion, tomato, jalepeno to the bowl and mix. Add salt to taste. Sprinkle with additional cut tomatoes. And enjoy with chips.

This makes a mildly spicy guac feel free to add more or less jalepeno to your liking. Even if you don’t like spicy you will want to add a little bit in it brings out a really great flavor in the guacamole.

I’ve read where you can make a lot of this and preserve it by putting the pit back in and covering with cling wrap to remove as much air as possible. I’ve even had a friend talk about her success with this method. However, I really like how fresh it tastes and don’t mind making more when I’ve run out rather than increasing the amount I make at any one time. And if you like cilantro, grab a small handful and chop it up and toss it in.

Other healthy snacks I like to munch on include: hummus & pita chips, a lighter version of buffalo chicken dip, fruit kabobs.
