Grandma’s Cookbook : Lime Pineapple Jello Salad

jelloSalad-3I’ve got another recipe from my Grandmother’s recipe collection. This was the first time I have ever made a jello salad, and it turned out great. At least that is what the ones who have had it before told me!


Ingredients : 1 can crushed pineapple, 3 oz + 3 tbsp lime jello, 20 large marshmallows, 8 oz cream cheese, 1 large can of milnot, 3/4 cup of chopped pecans (optional).

jelloSalad-1Bring the first 3 ingredients to a boil and stir until the marshmellows melt. Then allow to cool. In a mixer whip up frozen milnot (freeze in a ice cube tray) until it has some volume. Flake in the cream cheese with a fork, you want there to be chunks of cream cheese in the salad. Then fold in the jello and allow to chill until you are ready to serve. For my first jello salad it went really well, I am not a big fan of lime jello so I am on the lookout for something in a strawberry banana variety.
