Easy Weeknight Dinners : Oven Baked Tacos

Tacos are a wonderful thing, and we probably eat them 3 or 4 times a month. This time I tried a new recipe for oven baked tacos. It was easy to put together one night after work and they tasted so good, I can’t wait till we can have this recipe again.

Ingredients :

1lb ground beef, 15 ounce can of black beans (drained and rinsed), 1 medium onion (diced), 1 packet taco seasoning, 2 cloves minced garlic, 12 taco shells (get the kind that stand up on their own, I crunched one of mine while trying to get them to stand.), 1 cup salsa, 1 cup shredded Mexican blend cheese.

Preheat oven to 400 degrees. In a skillet put a little olive oil and cook the onions & garlic until soft. Next add in the ground beef, right before completely browned add the taco seasoning. Add the beans and salsa mix well. And cook for a few more minutes.

In a 9×13 pan place your taco shells, scoop in the meat mixture and top with cheese. Bake for 8 to 10 minutes. Serve with whatever toppings you normally eat on tacos or plain they are very good!
