For my first Date Night In recipe I want to share a Chicken Fried Rice dish that was shared with me several years ago. I love getting Chinese take-out and having a date at home, but it is better when you make it yourself. Trust me, it is fresh and delicious, and truly easy to make on a weeknight. And if you want to incorporate some of the tips from my post last week this is definitely a recipe you and your date can cook together. I like making things from scratch and I love how fun it is to make some favorite take-out dishes at home together. It doesn’t take long to make if you have made the chicken the night before or earlier in the week.
Ingredients
2 Cups of Brown Rice, cooked
Canola Oil
2-3 Cups Shredded Chicken Breast
1 1/2 Cup sliced Carrots
1 Medium Onion Diced
1 1/2 tsp Minced Garlic
1 can water chestnuts
1 cup Frozen Peas
2 Eggs Beaten
2 TSP Sesame Oil
2 TBSP Soy Sauce
Sesame Seeds for Garnish
Directions
Cook Chicken ahead of time. I place a bunch of chicken in my slow cooker with some onion, salt, pepper, and water and cook on low for 8 hours or overnight. Then I use this for recipes throughout the week. Set aside 1 – 2 chicken breast and shred put the rest in the fridge for later. Like most things if you want chunky chicken in this dice it up instead of shredding.
Prepare rice according to package, while cooking in a separate large skillet heat 1 TBSP of oil. Sauté carrots, onions and garlic until the carrots are tender. Then add water chestnuts, chicken, and peas. Cook until peas are soft and move all ingredients to the side leaving a space in the center. Beat the eggs and season with a little salt and pepper. Add a little more oil to the open space in the pan ad scramble the eggs until they are cooked. Once they are set mix everything together and add in the rice. Drizzle on the sesame oil and the soy sauce! And if you are feeling extra fancy on your date night garnish with sesame seeds.
