I really love homemade cookies. They are a great comfort food to have around. I haven’t ventured out past chocolate chip cookies too much but when the weather started to turn cool this year I knew I wanted some Chocolate Chip Oatmeal Cookies. I’m just not one for the traditional raisins and in fact I’m not a big fan of raisins anyway. Below you will find my recipe for these wonderful chewy Chocolate Chip Oatmeal Cookies!
1 cup salted butter, at room temperature
1 cup packed light brown sugar
1/2 cup white sugar
2 teaspoons vanilla
1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 1/2 cups quick cooking oats
1 cup semisweet chocolate chips
Preheat your oven to 325 ferinheight. In your mixer place the butter and sugars and cream together till smooth. Beat in one egg at a time and then add the vanilla. In another bowl mix together the four, baking soda, and salt. Add to the creamed mixture until just blended. Fold in the quick oats and chocolate chips.
Cover your cookie sheet with parchment paper. I used a 2 tablespoon cookie scoop to drop the dough onto my cookie sheet. And bake for 12 – 15 minutes. Allow them to cook for an another 5 minutes on the cookie sheet before transferring them to the cooling rack.
It is important to take them out before they are brown if you want them to remain soft and chewy.
