I haven’t always been a soup person, but recently I’ve been relying on soups for weeknight dinners. And as the colder weather creeps in a nice bowl of soup can hit the spot. My favorite soup recently has been a cheeseburger soup. It is creamy and hearty and includes a lot of vegetables.
Ingredients: 1lb ground beef, 3/4 cup chopped onion, 3/4 cup chopped carrots, 3/4 cup diced celery, 1 tsp dried basil, 1 tsp parsley flakes, 4 tbsp butter (divided), 3 cups chicken broth, 4 cups diced potatoes, 1/4 cup all-purpose flour, 2 cups shredded cheddar cheese, 1 cup milk, 1/2 cup heavy cream, 3/4 tsp salt, 1/2 tsp pepper
In a large soup pot brown your ground beef. Drain and set aside. Next, add 1 tbsp butter to the same sauce pan and melt. Add carrots, onions, celery, basil, and parsley then cook till tender. Add the broth, potatoes, and return meat to pan. Bring to boil, reduce heat and cover. Cook potatoes through. Meanwhile, in a small skillet melt the remaining amount of butter and use the flour stirring for 3 minutes until bubbly. Add this rue to the soup, stir and bring to a boil. Reduce heat to low. Finally, add in cheese, milk, cream, salt and pepper to taste. Stir until cheese is incorporated.
I saved a little cheese to sprinkle on top and sliced a few green onions, which in my opinion was the icing on the cake. I hope you enjoy!
