I really love baking! It has been a while since I have taken the time to make something. However, for the next several weeks I want to keep making and make some different kinds of cookies! Here is my first cookie recipe!
Cake Batter Cookies (makes roughly 12)
2 cups all purpose flower
1/4 teaspoon baking powder
1/4 teaspoon salt
1 stick (softened) butter
3/4 cup sugar
1/2 teaspoon vanilla extract
1/2 cup milk
Preheat oven to 375 degrees F. In a bowl whisk together the flour, baking powder and salt; set aside. Cream together the butter and sugar in your creamer for about 1 minute. Next, add in the egg and vanilla extract, mix until combined. Once mixed well add in half of the flower mixture, mix and then add in half of the milk (scrape down sides before mixing in new ingredients). Add in other half of the flour followed by the rest of the milk. I scooped about a little less than 1/4 cup for each cookie and placed about 2 1/2 inches apart on my cookie sheet.
Bake for 18 – 20 minutes, until the edges are brown and the centers are just done.
1/3 cup corn syrup
1/2 cup water
2 cups powdered sugar
2-3 ounces semi-sweet chocolate, melted
In a pot combine the corn syrup and water over low/medium heat, stir as it cooks. Once mixed remove from heat and stir in 1 cup powdered sugar. Pour 2-3 tablespoons of the mixture into the melted chocolate, stir until well combined. Add in more powdered sugar mixture if the chocolate is too thick. (There will be some of the mixture left over in case you need to add more like I did.) Glaze your cookies and enjoy!!
