My new favorite holiday cookie! If you can call it a cookie maybe desert? Anyway this was my first blondie making experience. I’ve made lots of brownies with different ingredients and toppings but hadn’t ever tried to make a blondie. This recipe was on the packing for some new cookie sheets we received at a shower this year and I was dying to try them ever since.
Blondies with Chocolate Chips and Walnuts
Ingredients : 2 sticks unsalted butter (melted), 1 cup packed light-brown sugar, 2/3 cup granulated sugar, 2 large eggs, 2 tsp vanilla extract, 2 cups all-purpose flour, 2 tsp salt, 1 1/2 cups semisweet chocolate chips, and 1 1/2 cups chopped walnuts.
Directions: Preheat oven to 350 degrees, brush a 9×13 rimmed sheet pan with butter; line pan with a piece of parchment paper, leave a 2 inch overhang on two sides and then brush butter onto the paper.
Whisk together butter and sugars until smooth. Whisk in egg and vanilla, then add flour and salt, mix until moistened (do not overmix). Fold in 1 cup of each the chocolate and walnuts reserving 1/2 cup of each for the top. Pour batter into prepared pan and smooth the top. Sprinkle with remaining chocolate & walnuts.
Bake until top is golden brown and toothpick comes out clean, about 35 minutes. Let cool on a wire rack. Use the parchment overhang to lift the blondies from the pan and transfer to a cutting board. Cut into 24 squares and enjoy!
These are kind of like giant chocolate chip cookies and are just perfect. I had to share them with neighbors and friends so I wouldn’t eat all of them myself!
